PANCAKES- Use any batter, we used Aunt Jemima, add your favorite apples chopped, or grated, mix with brown sugar and stir into your batter. Pour pancake mix in cast iron skillet; set BGE at 325F bake for 25-30 minutes or until done when toothpick comes out clean.
1 Cup Sugar
2 TBSP Cornstarch
2 tsp Cinnamon
½ tsp pumpkin pie spice (add more or leave out to taste)
2 Cups Apple Juice or Apple Cider
2 TBSP Lemon Juice
¼ Cup Butter
In a saucepan combine sugar, cornstarch, cinnamon, apple juice and lemon juice. Bring mixture to a boil. Remove the pan from the heat and stir in butter until melted.
Serve warm over pancakes.
Hint- like a little thicker or thinner syrup, add more or less cornstarch.
Some like to serve with sour cream on pancakes too.
